Warm Grain Free Banana Protein Muffins
67 ripe bananas mashed
(we toss our over ripe bananas in the freezer and use when we need them)
5 whole eggs (vegan alternative)
0.50 cup cane sugar
1 cup low glycemic vanilla protein powder (beware of splenda, sucralose, aspartame and amino sweet in low sugar protein powders!)
2 almond flour
1 tbsp stevia
2 tsp baking soda
1 tsp sea salt
0.50 tsp baking powder
0.67 cup butter or coconut oil
2 tsp xantham gum (optional for prettier, better rise in your muffin)

Heat oven to 350

Mix all ingredients with mixer

Scoop mix into muffin cups

Bake until brown and knife comes out clean (typical is 18 min but I typically set the time at 15 minutes and start to check to ensure they don't burn)

Let cool and enjoy!
