Zucchini Chips

 1 large zucchini
 2 tbsp olive oil
 Kosher Salt to taste
Optional Season Variations:
 ¼ tsp Dried Onion Powder, oregano, mrs dash seasoning, cajun seasoning, stevia, parsley or basil

Preheat oven to 225F

Line two large baking sheets with silicon baking mats or parchment paper

Slice zucchini very thin, such as on a mandolin.

Place slices on a paper towel and sandwich them between paper towels to draw out moisture so that they bake faster

Place slices on baking sheet in tight lines, making sure you do not overlap them

Use a pastry brush to brush olive oil on each slice

Sprinkle salt throughout the baking sheet. Make sure you do NOT over season. You can always add more later!

Bake for 2+ hours until they are no longer soggy and are slightly brown

Let cool before removing and serving

Keep in an airtight container for no more than three days
